Looking for new ways to add protein to your diet in the morning? Lately, in trimester two of this pregnancy, I have not been a fan of eggs or yogurt – my typical go-to when adding protein in my diet. Friends, I discovered banana pancakes this week though – and I am obsessed. I feel good about eating them since I know they are nourishing my body, it is the easiest recipe (especially for days I wake up with zero energy) and they taste heavenly!

Banana Egg Pancakes

Ingredients:
1 ripe medium banana
2 eggs
1 tsp cinnamon
½ tsp vanilla
½ tsp baking powder

Directions:
1. Mash the banana until smooth. Blend in eggs, cinnamon, vanilla and baking powder.
2. Heat a skillet with a dash of vegetable oil. Pour the banana mixture in the hot skillet. Let cook for 1-2 minutes, then flip. Cook for another 1 – 2 minutes and serve.
3. Enjoy this gluten-free, dairy-free breakfast treat with your favorite toppings.
Topping ideas:
They are naturally sweet, so I didn’t find the need for syrup but I do love spreading peanut butter on them.
